Dubai Dining – The Hummingbird Bakery at Dubai Mall

We were supposed to watch HOME movie at  Dubai Mall but we were late so we didn’t catch the last showing. Instead of being upset, we treat them Happy Meal toy at Mc Donald’s.

While eating they were asking us to watch Dancing Fountain and luckily it was not crowded.

When I asked them what’s their next plan. They are torn between ice cream or cake.  But later on we settled to try The Hummingbird Bakery.

The Hummingbird Bakery is located on the Lower Ground Floor of The Dubai Mall. They specialized in offering american style cupcakes. Their success has been it’s ethos that cakes taste best when fresh from the oven.

Cupcakes, layer cakes, brownies, cheesecakes and more are prepared in dedicated onsite kitchens using only the finest quality ingredients. The Hummingbird Bakery is pleased to bring its own brand of indulgent American-style baking to the Middle East.

In addition to their freshly baked sweets there’s also a selection of hot and cold beverages. We let the kids ordered their food and they chose to try the best seller Rainbow Slice and Chocolate Cake.

Rainbow Spectacular – multi-coloured marvel of moist sponge layers and lightly whipped white buble gum flavored frosting i

The ultimate chocolate lover’s cake, moist layers of chocolate sponge, iced with chocolate buttercream frosting.

Cost – Total of Dhs 36 for the two slice cake.

Verdict – The Chocolate cake was too dense and heavy and thus not worth the effort and calories. Hence, the Rainbow slice was equally bland although the buble gum flavored frosting cream was OK.

O is for OREO Muffin

Initially, my planned is to bake simple vanilla muffin but when I looked at the pantry, I saw Oreo cookies waving right to my face.

Here is my take on it; a simple vanilla muffin with an Oreo surprise on the bottom, why not?! This will be such an unexpected and delightful treat for kids.

It’s pretty much perfection. If you’re looking for something fun to bake this weekend, look no further.

I’m sure they’ll quickly become your favorite muffin too!

The super palpak 3-ingredients Nutella Muffins

I never enrolled in baking class but I love baking that even though I have so many “palpak outcome” I will never quit! So today’s post is one of those days that I wished I listen to my instinct.

I tried the 3-ingredients Nutella Muffins and it didn’t turned out as moist and delicious muffins as I expected. Maybe I over beat the batter or tinipid ko yung nutella or maybe sadyang palpak lang period!

However,if you still want to try the recipe these three-ingredient can actually do the trick. The ingredients are just Nutella, eggs and flour. How nice and simple is that, yet I failed! huhu

If you’ll bake the recipe, please let me know if your muffins become fudgy and moist para mainggit ako..haha

3- Ingredients Nutella Muffins

  • 1 1/2 cup Nutella
  • 3 eggs
  • 1 cup all purpose flour

  1. Preheat the oven to 350 . Line muffin tin with cupcake liners
  2. In a large bowl, whisk the eggs together Add the Nutella. Whisk them together until your mixture is smooth and shiny.
  3. Add flour and gently stir in it just until the flour streaks disappear. Don’t over work with it or your muffin will be tough as mine.
  4. Bake the muffins for about 13-15 minutes until the tops are puffed and cracked and spring back when lightly pressed.

Banana Oatmeal Bread

I guess by now you are convinced that my baking mojo is back. If you are on diet but still wants to satisfy the sweetness cravings then I recommend to try this recipe.

This nutritious bread is easy to mix up and will make the whole house smell wonderful.

Banana Oatmeal Bread

  • 1/2 cup(s) unpacked brown sugar
  • 1/2 tsp table salt
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • 3 tsp canola oil
  • 3 large bananas
  • 1 large egg
  • 2 large egg whites
  • 1 cup(s) uncooked old fashioned oats (I used the oatmeal that my sister gave to me it’s a mixture of nuts and raisins- for added flavor)

  • Preheat oven to 350°F. In a large bowl, stir together dry ingredients. Add oil and eggs; mix thoroughly.
  • In a smaller bowl, mash bananas with a potato masher or fork. Add bananas and oatmeal to batter.
  • Spray a loaf pan with cooking spray. Pour batter into pan and bake until top of loaf is firm to touch, 45 to 55 minutes. Remove from oven and allow to cool in pan for 5 minutes. Flip out and cool on a wire rack for another 10 minutes.

This is Raquiza’s most requested bread. She even posted it on her Facebook asking me to bake more!! So I highly recommend it to give it a try!
