Spring delights- Ham and Cheese Cupcakes

There are so many reasons that I thanked God every day. And one of them is blessing me with an adorable daughter. We often called her “kutchi-kutchi Isabelle”. She’ll be turning 3 months in few days, and everyday she’s becoming more playful to her brothers.

Now,that she’s growing fast I couldn’t help but think how our girls bonding would be. Girls talk, shopping, lovelife and I am pretty sure baking and cooking will be on our list too.

As a matter of fact, I am thinking of compiling all the recipes and create a book that she could use in the future. 😜

On the other hand, since it’s Spring Break , I’m on a mission to bake new food aside from sweet and chocolate-y cupcake. For our breakfast today I baked ham and cheese cupcake.

My eldest son doesn’t like Ham and Cheese Sandwich but he loves cupcakes. What about ham and cheese wrapped in cupcake? Clever idea right?!

Our entire house swelled with the scent of melted butter and freshly grated cheddar cheese. Mmmm..

Ham and Cheese Cupcake

1 1/2 cups all-purpose flour
1/2 tablespoon baking powder
1/2 teaspoon salt
1/2 cup butter, cubed
1/3 cup sugar
2 large eggs
1 teaspoon vanilla extract
1/2 (5-ounce) can condensed milk
1/2 cup ham
1 cup grated cheddar cheese, divided

Preheat oven to 350°F. Line a 12-cup muffin tin with cupcake liners.

Combine all-purpose flour, baking powder, and salt in a large bowl. Stir well; set aside.

In the bowl of an electric mixer fitted with the paddle attachment, cream butter and sugar together on medium speed. Mix until batter is pale yellow in color, about 3 to 5 minutes.
Add eggs and vanilla extract; mix. Add condensed milk.

Bring mixer speed to low. Add the flour mixture gradually.

Add 3/4 cup grated cheese. Mix until well combined.

Scoop batter onto prepared muffin tin until cups are 3/4 full. Sprinkle each muffin with dice ham. Bake for 25 to 30 minutes or until a toothpick inserted in the center of a cupcake comes out clean.

Remove pan from oven. Let cool completely on a wire rack before serving.

To-Go-Baked Pancake with Your Favorite Hotdog

We loved pancakes. We loved Purefoods hotdogs. How about pancake and hotdog in one bite?! Pwede di ba..

The idea is to use a basic pancake batter recipe, fill up a muffin tin with batter, then top off each muffin with hotdog.

This plain pancake mixture is actually quite tasty all on its own.  You could make this baked pancake without any additional toppings and it would be delicious.

These are such an awesome grab-&-go breakfast.  They are also perfect pambaon ng kids.👍

The super palpak 3-ingredients Nutella Muffins

I never enrolled in baking class but I love baking that even though I have so many “palpak outcome” I will never quit! So today’s post is one of those days that I wished I listen to my instinct.

I tried the 3-ingredients Nutella Muffins and it didn’t turned out as moist and delicious muffins as I expected. Maybe I over beat the batter or tinipid ko yung nutella or maybe sadyang palpak lang period!

However,if you still want to try the recipe these three-ingredient can actually do the trick. The ingredients are just Nutella, eggs and flour. How nice and simple is that, yet I failed! huhu

If you’ll bake the recipe, please let me know if your muffins become fudgy and moist para mainggit ako..haha

3- Ingredients Nutella Muffins

  • 1 1/2 cup Nutella
  • 3 eggs
  • 1 cup all purpose flour

  1. Preheat the oven to 350 . Line muffin tin with cupcake liners
  2. In a large bowl, whisk the eggs together Add the Nutella. Whisk them together until your mixture is smooth and shiny.
  3. Add flour and gently stir in it just until the flour streaks disappear. Don’t over work with it or your muffin will be tough as mine.
  4. Bake the muffins for about 13-15 minutes until the tops are puffed and cracked and spring back when lightly pressed.

Hotdog Buns and Garlic Herbs Bread

For quite sometime now, I’ve been posting in the Facebook about my passion and that is baking. Yes!! My baking mojo is back and I am delighted to share the two breads I tried last Saturday.

It started lang when I have excess dough from the Cinnamon Roll that little A requested me to bake. Since I already baked quite enough for our consumption, I thought of trying the Hotdog buns and bring it to our meeting. I wanted them to try my bread kasi the kids from the Kids Ministry likes to eat Hotdog Buns from Al Sham Bakery near our place. So I thought it would be a nice idea of I will venture my passion into business.

Fresh from the oven I asked little A to taste it so he can give his feedback and I asked him which one is more delicious and he agreed that my Hotdogs Buns are far from what they are eating. This could be my chance to be “negosyante”..hahaha

I wanted to share the recipe kaso baka maudlot ang business ko..hahaha!!

I’ll show na lang some of the photos para matakam kayo..

Valentine’s delight – Cinnamon Sugared Donuts

I took lieu day today because little A is sick again. I don’t know if i should blame it to the weather or blame myself for allowing him to go to the park with his playmate and babysitter.
Actually when the babysitter called us from work she asked if she can take little A with them but daddy A was a bit hesitant because the little boy doesn’t have jacket but the babysitter assured us that they have spare one to lend to little A.Kaya napapayag kami.

That evening when he came home he’s so tired and cranky so after cleaning his body we sleep na.
The next day clogged na ung nose nia. Then last night when i fetched him he’s sick na tlga as in me lagnat.
When we checked his body temp it was 38.9. Haist! Not again! Di pa nga sia fully recover eh. I asked daddy A to insert suppository and we monitored his temp round a clock.
So far ngayon wala siang fever but he’s downed with colds and flu.

And because I’m depressed i need a happy hormone. I always wanted to try to cook homemade donut but can’t find the right timing.
I have done a lot of baking and cooking and this was honestly one of the easiest, most delicious recipes I have tried to date. The donuts were so moist and fluffy.

These would be great for Valentine’s Day or simply just for a mouthwatering dessert everyone will love.

Want to make some?!

You will need pizza dough
Melted butter in a shallow bowl approximately 1/4 cup
Mixed together the Sugar & Cinnamon in a shallow bowl.

Veggie oil to fill your pan up to about 1/2in or so.
Heat up oil for a few minutes on medium heat.
While it is heating up, cut the pizza dough with a cookie cutter (i used star and heart)

When one side is golden brown, flip with tongs. When that side is golden remove from oil and place on a paper towel lined pan or plate.
When the donuts have cooled enough to handle…using your fingers dip one side in the melted butter, let the excess drip off, dip in cinnamon and sugar mixture. Get it nice and coated. Flip over and repeat for the other side.

Talk about melt in your mouth amazing and buttery and oh so sweet!

Now I’m happy!
