O is for OREO Muffin

Initially, my planned is to bake simple vanilla muffin but when I looked at the pantry, I saw Oreo cookies waving right to my face.



Here is my take on it; a simple vanilla muffin with an Oreo surprise on the bottom, why not?! This will be such an unexpected and delightful treat for kids.



It’s pretty much perfection. If you’re looking for something fun to bake this weekend, look no further.



I’m sure they’ll quickly become your favorite muffin too!

Spring delights- Ham and Cheese Cupcakes



There are so many reasons that I thanked God every day. And one of them is blessing me with an adorable daughter. We often called her “kutchi-kutchi Isabelle”. She’ll be turning 3 months in few days, and everyday she’s becoming more playful to her brothers. 

Now,that she’s growing fast I couldn’t help but think how our girls bonding would be. Girls talk, shopping, lovelife and I am pretty sure baking and cooking will be on our list too. 

As a matter of fact, I am thinking of compiling all the recipes and create a book that she could use in the future. 😜

On the other hand, since it’s Spring Break , I’m on a mission to bake new food aside from sweet and chocolate-y cupcake. For our breakfast today I baked ham and cheese cupcake. 

My eldest son doesn’t like Ham and Cheese Sandwich but he loves cupcakes. What about ham and cheese wrapped in cupcake? Clever idea right?!



Our entire house swelled with the scent of melted butter and freshly grated cheddar cheese. Mmmm.. 





Ham and Cheese Cupcake

1 1/2 cups all-purpose flour
1/2 tablespoon baking powder
1/2 teaspoon salt
1/2 cup butter, cubed
1/3 cup sugar
2 large eggs
1 teaspoon vanilla extract
1/2 (5-ounce) can condensed milk
1/2 cup ham 
1 cup grated cheddar cheese, divided

Directions:

Preheat oven to 350°F. Line a 12-cup muffin tin with cupcake liners. 


Combine all-purpose flour, baking powder, and salt in a large bowl. Stir well; set aside.

In the bowl of an electric mixer fitted with the paddle attachment, cream butter and sugar together on medium speed. Mix until batter is pale yellow in color, about 3 to 5 minutes.
Add eggs and vanilla extract; mix. Add condensed milk.

Bring mixer speed to low. Add the flour mixture gradually.


Add 3/4 cup grated cheese. Mix until well combined.


Scoop batter onto prepared muffin tin until cups are 3/4 full. Sprinkle each muffin with dice ham. Bake for 25 to 30 minutes or until a toothpick inserted in the center of a cupcake comes out clean.

Remove pan from oven. Let cool completely on a wire rack before serving.

BANANA & NUTELLA PUFF PASTRY PIES.



Because I’m still adjusting to my new role of being a mother of three, I have something real easy for you. This is so delish especially for those Nutella lover.

Combine your cravings with Nutella. 

You only need three ingredients: nutella, banana and puff pastry. I always love to try to make thing from scratch, but I am so nervous to fail so I cheated and used shop bought puff pastry – hey, don’t judge – because I felt like I deserved to slow down besides my boys wanted to help so our afternoon is filled with so much flour and cookie cutter.

THREE INGREDIENTS BANANA & NUTELLA PUFF PASTRY HAND PIES

INGREDIENTS
  • 1 sheet (320g) puff pastry, thawed
  • 1 banana, sliced
  • ½ cup nutella


INSTRUCTIONS
  1. Preheat oven to 220 degree celcius.
  2. Using cookie cutter cut the puff pastry sheet into 6 equal shapes, and set aside 3 of them. On the remaining 3, place banana, followed by dollops of nutella. Then place one of the shape of puff pastry you had set aside on top of the nutella. Seal the two shape of pastry together by pressing the edges with a fork. 
  3. Place the pies onto a baking tray lined with greasproof paper and leave in the oven for approx. 25-30 minutes or until they have turned golden brown.

Valentine’s delight – Sugar Glazed Cinnamon Sticky Buns

From the title itself you already knew that I am  truly a bona fide cinnamon addict.

There’s something so satisfying about the taste of these cinnamon sticky buns especially when paired with coffee, soft inside of a buns that makes themso tempting.

It’s a snack food that transcends seasons – whether you’re enjoying a DVD marathon on a cold night or simply you just want to to just have something to nibble.

It’s irresistible and  perfect anytime!

Choco Banana Oat Mini Muffin

We’ve had a few chillier days here in Dubai!

It’s made me crave the comforts of a nice, soft chocolatey dessert…

The mini muffins smell amazingly when they are baking and I’d say that they are absolutely rich in flavors.

The additions of oats added some interesting texture to the muffins. The Maltesers gave the muffins a subtle overall maltiness and will fancy on your tastebuds, I’m sure!

You probably know by now that we loved cookies. We made several delectable goodies using chocolate chips and they were so good and yummy.

No doubt that this year for Santa’s treat we will surely bake him Christmas Chocolate Chip Cookies.
