Easter fun with Little A – Freshly baked Corn Muffins

We’ve been so busy last weekend and I can’t find energy to do our usual activity. Our supposed to be egg decorating activity has been set aside. We’ll do it next week instead. We changed our lesson a bit but still on Easter theme.

This time we will have family movie date. HOP is a great Easter-ploitation movie.Bunnies, Candy, and Eggs. Who would’ve thought that those three words have  anything in common? Filled with fun and hilarity to fullest a must watch movie for Easter treat!!

I guess the best way to enjoy our date is eating freshly baked CORN MUFFINS. Little A likes corn so much. So I asked him if he likes to help mommy in baking. Spending some quality time with our kiddo’s is the BEST!!

Ingredients:

  • 1/2 c. butter, softened
  •  2/3 c. sugar
  •  1/4 c. honey
  •  2 eggs
  •  1/2 tsp. of salt
  •  1-1/2 c. of all-purpose flour
  • 3/4 c. of yellow cornmeal
  •  1/2 tsp. of baking powder
  •  1/2 c. of milk
  • 3/4 cup kernel corn

Mix all the dry ingredients ( flour, cornmeal and baking powder and blend thoroughly)

Cream together butter, sugar, honey, eggs and salt in a large bowl

Add corn to mixture and combine by hand until corn is worked in

Grease a 12-cup muffin pan
Fill each cup with batter. Bake for 20-25 minutes or until muffins begin to turn brown on top.
Let the little boy indulge the fruit of his labor..

There are so many ways in which you can involve our child in celebrating the Easter holidays while creating some wonderful memories and family traditions too.Have a blessed Palm Sunday everyone..
